何謂春綠茶

中國綠茶未經氧化 — 葉子的酵素在採摘後數小時內即被殺死,通常以熱鍋或蒸汽隧道進行,將葉綠素與嫩芽的柔軟氨基酸甜味鎖住。後續所有工序皆為雕琢:將Lóng Jǐng拍壓在鍋壁上,雙手揉捲出Bì Luó Chūn的緊實捲曲,在炭火上將Máo Fēng的茸毛搖散成螺旋狀。

春天是頂級茶葉唯一關鍵的窗口。Qīngmíng前(4月5日前)的採摘,是越冬後首批萌發的嫩芽 — 濃縮、兒茶素苦味低、茶胺酸含量高。Gǔyǔ前(4月20日前)是第二個窗口,茶體稍顯厚實。此後葉片變得粗老,糖分下降,茶葉淪為日常飲品等級。本季提供的樣品全部是2026年Qīngmíng前採摘,焙火後48小時內真空密封,從廣州冷藏寄運。

品嚐時應有的風味:栗子、甜豌豆、烤米、河石,第二泡時隱約的蘭花香氣。好的綠茶不應帶青草味 — 那氣味通常意味著焙火不足或葉片陳舊。它應該像輕輕烘烤過的春天蔬菜,吞嚥後三十秒喉間回甘。中國人稱之為huí gān — 回甘的甜韻。

Brewing a 5g sample well

水溫 75–80°C

Boiling water scorches young green leaf and turns it bitter. Let the kettle rest 3–4 minutes off boil, or pour through a fairness pitcher to drop the temperature.

初嚐以玻璃杯而非蓋碗

A tall glass lets you watch the leaves dance and sink — diagnostic for freshness. Use 3g in 200ml, drink down to a third, top up again. Three infusions per gram is realistic.

Green tea is the most fragile category. Even vacuum-sealed and refrigerated, the bright top notes fade by autumn. Treat samples as immediate tastings, not pantry stock.

If you cannot drink within a week of arrival, freeze the unopened pouch. Bring to room temperature for 24 hours before opening — condensation on cold leaf ruins it.

Unlike pu-erh or oolong, green tea does not need a wake-up pour. Rinsing strips the most delicate aromatics. Go straight to the first steep at 20 seconds.

How fresh are the 2026 samples when they arrive?

Pre-*Qīngmíng* picked, fired within 24 hours, vacuum-sealed within 48, shipped from Guangzhou cold-chain. Most orders land 6–8 weeks after harvest.

Can I order both green samples in one shipment?

What if I have never brewed green tea before?
